I've not had any problem hiking in sturdy sandals. There are cacti and acacia thorns to watch out for, but the acacias can go right through shoes (and bike tires), so you have to watch out for them regardless. Our daughter hikes in flip flops, which I can't stand, but since she wears them everywhere, including in the winter in Michigan, she does fine. I always take a sweatshirt, and never wear it. Shorts, tank tops, swimsuits, and an old T-shirt to protect your back from the sun when snorkeling should be plenty.
For the restaurants we've eaten at, we've fit right in with shorts and casual tops -- tank tops, T-shirts, etc. We bring our own snorkel equipmentr, including fins, but if you're flying and weight is a consideration you may want to leave the fins at home and rent.
